Our Organic Raw Greek Pine Honey comes from Thasos Island. It is made when bees harvest honeydew from pine needles and the bark of trees. Honeydew honey is superior to flower honey due to its high mineral and amino acid content and antimicrobial activity.

What Does it Taste Like?

Organic Raw Greek Pine Honey is not very sweet, due to its low glucose content, while its aroma is spicy and unusual, reminiscent of iodine.

Organic Raw Greek Pine Honey is honeydew honey since it is produced by bees that collect nectar from honeydew excreted by plant-sucking insects called Marchalina hellenica.

The Honey is secreted from June to April but it is not harvested all this time. Also, for the bees to be able to collect the honey, the relative humidity must be above 65% - 67% and the temperature from 20^οC - 21^οC.

Pine honey has a special and characteristic color which depends on its production period. The color of Pine Honey is in shades from dark yellow to light brown. Pine Honey produced in spring has a lighter color and greater clarity than that produced in autumn.

Pine Honey crystallizes slowly, due to its low glucose content, and pure pine honey can remain liquid for a long time, more than a year and a half.

The Honey is cold extracted, unfiltered, unpasteurized, and unprocessed, ensuring its nutritional properties are preserved.

The nutritional value of Pine Honey is very high thanks to the large number of minerals and trace elements it contains - magnesium, calcium, zinc, iron, and copper are some of the minerals and trace elements found in its composition. It also contains carbohydrates, proteins, amino acids, vitamins, and enzymes which makes it an ideal food for athletes, children, and people with intense physical and mental activity. Its low content of sugars and glucose allows its consumption by all age groups. Finally, it has a very low caloric value since 15 grams correspond to 46 calories.

Scientific research has shown that Pine Honey has anti-inflammatory and antiseptic effects and also helps treat coughs, sore throats, and gout. The low pH combined with the high hydrogen peroxide content acts preventively to treat a wide range of microorganisms. Pine Honey is great when it's spread across toast, pancakes, hot scones, cereal, porridge, or added to pep-up fruity dessert dishes or yogurt.

Notes & Tips:

• Storage: honey should be stored away from direct sunlight in a dry place at room temperature or below. Always ensure the lid is secured tightly.
• Crystallization: raw honey crystallizes over time, and it is a natural process. Honey thickens and changes its state - it hardens and becomes grainy. Different types of honey crystallize differently. Some types of honey become very grainy and form larger crystals. Changes in color and structure (crystallization) are signs of raw, unpasteurized, and unprocessed honey.
• Consistency: if you prefer softer, more liquid honey, you can gently warm it by putting the jar in hot water. Warming will liquefy the crystallized honey. Avoid exposing honey to temperatures over 45°C, because higher temperatures may destroy part of the natural nutrients. Please make sure the jar is closed correctly to ensure no water contaminates the honey.
• Colour changes: please know that raw honey can vary in colour and taste from batch to batch - honey changes with the season and climate and depending on what the bees feed on.
