Our Honey
Our honey is pure nature's miracle created by the bees.
Raw and Unprocessed.
Our honey is raw - unprocessed, unpasteurized, and unheated. Besides, our honey is free of artificial additives like colourants, flavours, preservatives, refined sugars, antibiotics, and pesticides. It ensures that our honey is unmatched both in taste and nutritional value and is far superior than regular processed honey.
Cold Extracted
We harvest each type of honey from one apiary and never blend it with other types of honey or other beekeepers' honey. Then our honey is cold-extracted with a manual centrifuge and our honey experts carefully bottle it by hand and package it up. As a result, our raw honey preserves all of its precious, healthy nutritional and healing properties.
From Pure Nature
Our apiaries are situated in pristine meadows and forests of Latvia and now also in Greece. The unpolluted regions far away from cities and roads offer the perfect conditions for our raw and eco-friendly honey production and allow us to provide honey with various delicious, rich, and distinct tastes.
Biologically Active
Most of our honey we harvest in beautiful Latvia, which is located in Northern Europe. Northern honey is about 10-15 times more biologically active than southern honey. In a nutshell, raw honey is a product created by bees using flower nectar. In the North, nectar retains longer in flowering plants because of the lower air temperature. Plants in the North also bloom longer, so they receive more minerals from the soil. The resulting northern honey is more biologically active than southern honey.
Sustainable and Ethical Methods
We have a small-scale team of local artisan beekeepers who deeply care for the bees and follow sustainable and ethical beekeeping practices. Since we also operate on organic principles, we use only natural healing remedies when caring for our bees.
Natural Crystallization
A key sign of raw honey is crystallizing as time goes by, forming a more firm texture composed of fine crystals. Crystallization is a natural process, and neither the taste nor quality of the honey is compromised. It is a sign that the honey is raw, free from added sugar, syrups, and heat treatments.
Frosting
Another sign of raw and unprocessed honey is frosting. It usually looks like a small white streak or crescent that gradually spreads on the shoulder or in the narrow upper part of the jar. These white areas are tiny air bubbles that get trapped between honey and the side or shoulder of the jar. Frosting is a natural feature of honey, and it doesn't impact the taste or the quality of honey
