Our Organic Raw Greek Fir Honey comes from the Mountain range Agrafa. It is made when bees harvest honeydew from fir needles and the bark of trees. Honeydew honey is superior to flower honey due to its high mineral and amino acid content and antimicrobial activity.

What Does it Taste Like?
It has a high density, which makes it very viscous. The low concentration of sugars contributes to its mild sweetness while its aroma travels to the fir-covered mountain peaks of the areas where it is produced. The color of Fir Honey varies depending on the region of origin and is from dark or light red to black.

Organic Raw Greek Fir Honey is honeydew honey since it is produced by bees that collect nectar from honeydew excreted by plant-sucking insects called Physokermes hemicryphus.
The production of honeydew takes place in the summer when the temperature rises enough, while drought is a necessary factor. In case of rainfall, honey production stops.
Fir Honey constitutes 5 - 10% of Greece's honey production and is considered one of the rarest and most delicious honey.
One of its most important properties is that it never crystallizes, thanks to its low glucose concentration, below 30%, making it the only honey that remains in its liquid form.
The Honey is cold extracted, unfiltered, unpasteurized, and unprocessed, ensuring its nutritional properties are preserved.
Organic Raw Greek Fir Honey is rich in polyphenols, phenolic acids, and trace elements such as potassium, magnesium, phosphorus, and iron. It has significant antioxidant, antimicrobial & anti-inflammatory activity, and has been used for centuries to treat sore throats and coughs, minor burns, cuts, and other bacterial infections.
It has a low glucose content, so it offers advantages in glycemic control. Honeydews are high in oligosaccharides, which are known for their prebiotic qualities - aiding digestion.
Common Uses
Organic Raw Greek Fir Honey is one of those honey that makes a perfect and much healthier alternative to table sugar and is great for everyday use. It's particularly nice when taken with black tea. Fir Honey is great when it's spread across toast, pancakes, hot scones, cereal, porridge, or added to pep up fruity dessert dishes or yogurt.
Notes & Tips:
- Storage: honey should be stored away from direct sunlight in a dry place at room temperature or below. Always ensure the lid is secured tightly.
- Crystallization: raw honey crystallizes over time, and it is a natural process. Honey thickens and changes its state - it hardens and becomes grainy. Different types of honey crystallize differently. Some types of honey become very grainy and form larger crystals. Changes in color and structure (crystallization) are signs of raw, unpasteurized, and unprocessed honey.
- Consistency: if you prefer softer, more liquid honey, you can gently warm it by putting the jar in hot water. Warming will liquefy the crystallized honey. Avoid exposing honey to temperatures over 45°C, because higher temperatures may destroy part of the natural nutrients. Please make sure the jar is closed correctly to ensure no water contaminates the honey.
- Colour changes: please know that raw honey can vary in colour and taste from batch to batch - honey changes with the season and climate and depending on what the bees feed on.
