From Flowers to Honey: How Landscape Shapes Honey

Honey is made by bees, but its story begins with the landscape around them.

The flowers available to bees, the surrounding vegetation, the climate and the season can all influence the honey they produce. This is why honey from different regions can vary so much in colour, aroma, flavour and character.

A jar of honey from a British meadow can taste quite different from one produced in the Baltic countryside. And a wildflower honey can offer a completely different experience from a deep, rich forest honey.

So what exactly creates these differences?

Honey is a product of place

Bees don't make honey from a fixed recipe. They collect nectar from flowering plants within their foraging area and bring it back to the hive, where it is transformed into honey. The plants growing around the hive therefore become an important part of the final product. This is known as the botanical origin of honey.

Its geographical origin matters too. Different regions have different climates, landscapes, soils and vegetation, all of which influence which plants grow and when they flower.

Scientific research has found that botanical and geographical origin can influence honey's chemical composition, sensory characteristics and naturally occurring plant compounds, including phenolics and flavonoids.

In other words: The landscape becomes part of the honey.

One of the most fascinating things about honey is that its flavour isn't added by the beekeeper.It comes naturally from the plants visited by the bees.

So is British honey better than imported honey?

There is no simple answer.

Being local doesn't automatically make honey superior, just as being imported doesn't make it inferior. The more interesting question is: Where did the honey come from, and what makes that landscape unique?

The Baltic region is shaped by forests, meadows, wetlands and long seasonal changes. For bees, this creates a diverse natural environment where different flowering plants become available throughout the warmer months.

Honeydew can originate in two ways: it may be produced directly by plants, or it can be the sugary excretion of sap-sucking insects such as aphids and scale insects.

Bees collect this sweet substance from leaves, branches and other parts of trees and plants, bringing it back to the hive where it is transformed into rich, distinctive forest honey.

This unique origin gives forest honey its characteristic deeper flavour, darker colour and complex profile — a true taste of the woodland.

If Wildflower Honey represents the diversity of the meadows, Forest Honey captures another side of the Baltic landscape — the woodland.

Does imported honey mean lower quality?

Not at all.

"Imported" simply tells you that the honey was produced outside the UK. It doesn't tell you whether the honey is good or bad. Honey sold in the UK is subject to food safety, compositional and labelling requirements, including requirements around country of origin.

For consumers, this makes origin an interesting detail to pay attention to. Knowing where your honey comes from gives you more context about the landscape, floral sources and traditions behind the product.

And when a producer is transparent about origin, it allows you to connect the honey in your cupboard with the place where it was made.

What should you look for when choosing honey?

When choosing honey, the label can tell you more than just what is inside the jar. It can also tell you something about where the honey comes from and how closely you can trace it back to its source.

Country of origin

Start by looking at where the honey was produced. The landscape, climate and floral sources of a region all contribute to the character of its honey. Knowing the origin gives you a better understanding of the story behind what you're buying.

Single-source honey

Not all honey reaches the jar from a single beekeeping source.

Large-scale honey production can involve combining honey from different beekeepers, regions or even countries to create a consistent product. Honey blends are a recognised part of the market, and UK regulations include specific labelling requirements for honey originating from more than one country.
